 3 Easy Breakfast Bush Meals:

Bush Potato Omelet.

Serves 4, preparation time 10 min, cooking time 12-15 min.

An easy to do and filling breakfast on the campsite.

Bush Potato Omelet, recipe.

Slice the sausage, and chop up the onion first and fry them in the pan until they are light brown. Put them aside in a bowl or container.

Drain tins of potatoes and ad to frying pan to cover the bottom and brown them for a couple of minutes.

Add the sausage, onions, corn and peas on top of the potatoes and the eggs mixed with salt & pepper at last.

Cook on low heat covered with foil until the eggs are set.

Ready to serve, add salt & pepper for tasting.

Enjoy!

1 Sausage (chopped)

1 Medium Brown Onion

2 x 400g cans of Potatoes

1 can of Corn & Peas

3 Eggs

Salt & Pepper



Bush Camp Pancakes:

Serves 4, preparation time 10 mins, cooking time 15 mins.

The pancake mix can be prepared at home and make it an easy breakfast at camp.

This is an easy meal and the kids and adults will love the pancakes.

Pancakes.

Mix together flour, salt, cinnamon, cardamom and sugar.

In another bowl mix together milk, oil, beer and eggs.

Mix together dry and wet ingredients

If making up the pancake batter at camp, let rest for 15 – 20 min.

Cook on frying pan about 1 min on each site or until golden brown.

Serve with topping at your choice.

 

Ingredients:

Wet

500 ml Milk

3 table spoons of Veg Oil

½ can of Beer

3 Eggs

Dry

2 Cups of Flour (500ml)

½ tea spoon of Salt

1 tea spoon of Cinnamon

1 Tea spoon of Cardamom

2 tea spoons of Sugar

 

Toppings:

Honey / Maple syrup, Brown sugar. Lemon, Butter, Jam, Ice-cream.



Bush Brekkie Wraps.

Serves 4, preparation time 4 min, cooking time 12 min.

Chop up the bacon and baby spinach, slice the mushrooms. (Can be prepared at home to make it easier)

Bush Brekkie Wraps, recipe.

Oil the pan, add the mushrooms and bacon and cook until crispy,

Mix the 4 eggs with the chopped up spinach and salt & pepper.

Add the eggs and spinach mix to the frying pan and cook while stirring until cooked.

Serve on wraps and add cheese and tomato sauce to your liking.

Enjoy!

4 Eggs

4 Rashes of Bacon

A handful of Baby Spinach

2 Small Mushrooms (Sliced)

4 Small Wraps

Salt & Pepper for taste

Cheese (for topping)
